This salad is as much fun to make as it is to eat, with springy, spicy coils of crunchy cucumber in a highly seasoned dressing. The nifty helix effect is achieved by placing two chopsticks alongside the cucumbers before cutting them to prevent the knife from going all the way through; however, if you are intimidated by the fancy knifework, it will taste just as good with the cucumbers sliced into chunky rounds. Either way, be sure to salt the cukes well to release some of the moisture.
