Easy Tostada Salads with Rotisserie Chicken

Mexican food can be heavy when it’s smothered with sauce and cheese, but you can enjoy South of the Border flavor on the lighter side with a tostada salad. This recipe uses rotisserie chicken for a quick shortcut and piles it high atop corn tortilla chips, romaine lettuce, black beans, corn, tomatoes and slices of avocado. Serve with a cup of gazpacho for a delicious late-summer dinner. Read more
